I would go 60 on the bleed to lean up the acceleration phase.

The bigger idle jet should help with your 2500 3rd gear leanness; with this I'd also go back to the 120 main to lean out your wot and cruise. 

 

Did you buy the drill set?

I haven't bought the drill set yet, but it's on the list.

Only problem I have with running the 60, is the last time I had it in there was a big stumble when I stepped on the throttle from a cruise. When I changed back to the 55 it went away. You think the 120 with the 60 will correct that? Here's the results from that run:

125 main 175 air 60f8 idles f16 tubes

Mixture screws 3.25 turns out

Idle: 12-14

2500 4th gear: 11-12 no surge

2500 3rd gear: 12-13 no surge, but stumbles with throttle

3000 4th gear: 9-10 light surge, stumbles with throttle

3000 3rd gear: 10-11 no surge, big stumble with throttle

3500 4th gear: 9-9.5

Normal accel: 9-10.5

WOT: 9-10

When you get your drill set you can take an old set of idle jets and drill the fuel bore to 60 and the air bleed to 140 (your F8 is 120).  This should give you the fuel you need to stop the surge but lean you up to cure the stumble, which appears to be a rich stumble (is it bogging down?).  This will allow you to have a smaller main = better cruise afr and not as rich at wot.

 

But you're closer.

Less than a week!  Like, 10 min :) its ok that's normal Weber obsession.

 

Don't mess with your existing idle jets, you'll need those for a baseline to go back to if you don't like the change.  If it is still bogging you can go to 150.  If you are really patient you can do 130 first, then 140, then 150 if needed.  Document along the way as you have been doing.  And clean the jets each time after drilling.  I used canned air or carb cleaner.

 

 

Yeah it was bogging down on throttle. I'll order the drill bits. Damn you :)
