What sensors need to be changed during a restoration?

On a 72tii there are only three sensors.

One oil pressure sender by the distributor. Single wire that goes to the instrument cluster warning light.

Two senders on the water jacket above the fuel injection pump. One of these senders is the single wire one that goes to the temp guage on the instrument cluster. The other sender is the two wire one that goes to the cold start timer box on the fire wall.

If you are doing a full restoration, I'd do all three senders. They will not add that much cost to the project.
