Gauge question (two parts)

OK first - I know about the ground strap issue, haven't done it yet but it was never a problem till now....

So Everything was fine. Fuel sender busted or went a-wall so I disconnected it. The only problem with that was I didn't know when the blinkers were on. So last weekend I fit in a new fuel sender and plug in the wires - all is good. EXCEPT now the gauges are all reading totally differently. As if there's more load in the system or something. The water gauge reads higher, the fuel gauge ticks with the blinkers (at least i know when they are on again!) and now the fan turns on when the gauge is in the red, rather than 2:00.

SO #1 is what's my problem or how can I fix this issue? Is it as simple as adding the extra ground wire from the gauges to the chasis?

#2 is related to the water temp issue. It never was a problem but since I'm going to MS-II shortly I have to add a second water temp sender anyway. Is there an accurate or what's the best, most accurate gauge, including placement etc. I want to know exactly where I stand coolant temp wise. I have a 91 degree switch for the fan - and it works. SO when the fan turns on the coolant at the bottom of the radiator is 91 deg. C. Why is my dash gauge pegged to the top? What's a good replacement route to go for an accurate sensor that could also run to the MegaSquirt/fan relay board?
