I Know James it's hard to resist Alpina's, but you just need to have flares.

As far as machining goes I have never done it so I can't help you, sorry.

How about a nice set of 15x6.5 BBS RA,RS or RM's with et of 33 or 35 instead?

take it in steps. Roll the fenders first. as to the wheels, you will probably install 195/50 15s on them. (borrow both 195/50 and 205/50 and have them installed. put them on the car and see if either will work. measure the thickness of the center portion of the wheels (as I recall, the ones on my E21 323i were rather thick and took longer bolts for the 15 by 7 than the 15 by 6 wheels. You may be able to get 1/8 to 1/4 of an inch milled off the back of the wheel without overly weakening the wheel (for Street Use) I have gone the other way and will use mine under pig cheek flares.
