So, bare with me...

If I want to test if a electrical component has gone bad, say a brake light switch- I can probe both ends, and test the resistance across the switch. If its infinite its "dead" right? I think I might have forgotten basic high school stuff...

Yes, you've got it right. Infinite = no circuit. Little or no resistance = working circuit. For a switch or a wire anyway.

and also it could be stuck closed, so iit should stop beeping on one position.

Use voltmeter to test a live circuit; ohmeter for dead circuits.
