When you guys first installed your Dcoe's did any of you have overheating problems? Im really kind of lost at what it could be. I dont think the bypass hose is restricted. The engine is taking fluids from the radiator. Im not really sure if the Carbs are running lean(Maybe a little) but would that really cause an overheating problem? Im thinking that it might be the temp sensor? Basically, I start the car up and it runs cold for a few minutes. Then quite dramatically it overheats to the red bar. Any help would be great

Your sympton of a needle that jumps from cold to hot indicates a bad sender/gauge.

Do not blame it on the carbs yet.

The gauge read hot and the actual temps were very safe when checked with an IR gun. Ground(s) on the gauge/instrument cluster and motor ended up being the problem. I did install a set of VDO's, one being a temp gauge, to have backup information.

The wire to the sender or the sender it's self maybe bad. That's something that is in the vecinity of where you have been working.

Watch the impedence change as the motor heats up to make sure it's working correctly? I'm still guessing that wire is the culprit...Either loose connection, or bare someplace shorting out...

If you see bubbles in the radiator, you have a head gasket leak or cracked head.

Check engine and body grounds from battery as others said.
