most 5 spd overdrive conversion opt for the 3.90 to get the acceleration without the penalty of increase rpms. But if you have a motor that can pull a 3.64 then that may be a good option too. Anything bigger or smaller becomes too specialized and not a good compromise for a daily driver. Differentials are easy to swap and cheap, so you in a sense you can have your cake and eat it too.

In mountains, windy little roads, 4.10 or higher if you can get it.

All freeways at 80 plus mph all the time, 3.64 is good. 3.90 is a great compromise.

Nobody there has a gas pedal. These people don't even realize they don't have a speed limit. Go with the highest ratio you can find, it will still be taller in fifth than it used to be in fourth.
