Reminds me of the arrangement they used to have on vintage cars. 

 

Why not? It's not a bad idea to have a diverse means of telling temperature since the stock gauge is subject to electrical vagueness. Need to check that it releases at the correct pressure and does the probe actually need to sit in the coolant as it looks a little short for the cold level?
