I'd build a 2002 out of stainless steel.

 

That'd be pretty sweet, but I think I'd use carbon fiber.

i don't think rebodying an e30 would be very pleasing to the eye - your proportions would be way off. 

 

Money being no object, i would do it some way like project binky https://www.youtube.com/user/badobsessionmsport or the Hoonicorn. A complete bespoke platform, mostly tubed.

If money truly were no object, I would find the running gear out of an old Ford RS200 and graft it to the chassis.

 

Or graft in the drive train from either a WRX or Evo.  The Audi TT is another option that I might consider.
