I am planning on replacing the horsehair padding in the back part of the rear seat to match the bottom part that was done by a PO long ago.
But I'm not sure what thickness to use, would an 1" be enough or should I go 2"?
How thick was the original padding?

you should first put down a couple of layers of the
grey felt padding. this is more dense then the foam
and will give support. then put the foam on top of that.
