I want to re-torque the head. In the Faq, it gives the torque specs. what does stage one, two and three mean?

I think it means stage one, torque to XX, stage two set to XX torque, then stage three XX torque.

That is correct, sometimes there is a wait period in between the stages to allow the stud to stabilize.
