Gonna go look at a '71 510 2door. What issues should I be looking for? It would end up being a bit of a street rat. I'd do a ridiculous engine swap, and leave the exterior as is. (rust makes it lighter right?). Any major things that are a pain in the ass or hard to find parts?

Trim parts are hard to find. Along with seals ect. The biggest problem, and you already eluded to this is rust in the rear sub-frame mount, rockers, quarters and fenders.
